Sous Chef, Senior Chef de Parties, Bartenders, Servers & Cellar Door Assistants

Key Responsibilities
- Sous Chefs help the Head Chef manage the kitchen each day, assist with the overall kitchen operation, and lead and coordinate kitchen staff during service
- Sous Chefs run an allocated section, organise mise en place and shift prep, give clear handovers between shifts and send out menu items that meet the set standards
- Sous Chefs help train and develop junior chefs, suggest ideas for new dishes and the menu, and encourage professional behaviour and good teamwork
- Sous Chefs track stock and ingredient use, help with food costing and inventory, handle ordering for their section, keep food safety and workplace health and safety standards, do temperature monitoring and other compliance checks, and keep a clean, efficient workstation
- Senior Chef de Parties look after an assigned kitchen section, finish the required mise en place before service and prepare dishes to menu specifications
- Senior Chef de Parties work closely with the Head Chef and Sous Chefs, keep shift handover notes accurate, talk clearly with the wider kitchen team and handle their workload well when it is busy
- Senior Chef de Parties guide less experienced cooks, help with training and skills development, and take part in preparing and developing dishes
- Senior Chef de Parties check stock and ingredient needs, help with ordering and inventory, keep food hygiene and safety standards, complete kitchen compliance procedures and keep their section clean and organised
- Bartenders set up the bar before opening and finish end-of-shift procedures, keep the bar clean and presentable, and do cleaning and fridge temperature checks
- Bartenders make cocktails to the required standard, pour wine and beer, make coffee to standard where required and get drinks to guests quickly and professionally
- Bartenders keep bar stock at the right level, help with stock counts and keg changes, and report anything that is running low
- Bartenders take payments correctly, answer customer questions politely, pass complaints or concerns to the Duty Manager and keep service professional and focused on guests
- Servers greet guests, give attentive table service, carry food and drinks professionally, follow the venue's order of service and watch what guests need during their whole visit
- Servers learn the menus and drinks well, explain dishes and ingredients correctly and suggest suitable extras
- Servers keep tables clean and tidy, do daily and weekly cleaning, take payments correctly, follow responsible alcohol service procedures, report service issues to the Duty Manager and work closely with kitchen, bar and front-of-house teams
- Cellar Door Assistants welcome visitors and run wine tastings, including private and group tastings, and support tours and special guest experiences
- Cellar Door Assistants get to know the wines well, explain wines and tasting experiences with confidence, answer enquiries, promote relevant products and venue experiences, and help reach individual and team sales objectives
- Cellar Door Assistants set up the tasting area, do opening and closing procedures, keep the guest area clean, restock products and displays, take payments correctly and make every visit professional and engaging
Requirements & Eligibility
- Every role: a work history that can be verified, evidence that supports your relevant experience and skills (and your qualifications for the chef roles), and eligibility for New Zealand employment and applicable sponsorship requirements
- Sous Chef: you have at least 3 years in a similar senior kitchen role, and you hold a relevant culinary qualification or have equivalent practical experience
- Sous Chef: you have shown leadership in a kitchen, you have managed a kitchen section and you understand professional food preparation and service well
- Sous Chef: you know food safety and workplace health and safety, you can train and support junior team members, you communicate and organise well, and you work effectively under pressure
- Senior Chef de Partie: you have at least 3 years of relevant professional kitchen experience, and a relevant culinary qualification or equivalent practical experience
- Senior Chef de Partie: you can manage a kitchen section, prepare and execute menus with strong skill, follow food safety and hygiene standards and support junior kitchen staff
- Senior Chef de Partie: you communicate and work well in a team, manage your time strongly and stay efficient during busy service
- Bartender: you have at least 1 year of relevant bartending experience in a professional bar, and practical knowledge of cocktails, wine and beer
- Bartender: you know responsible alcohol service, give strong customer service, have good people and communication skills, process payments accurately and work efficiently in a busy venue; barista skills are an advantage
- Servers: you have at least 1 year of relevant hospitality experience, including professional food and beverage service, and good knowledge of hospitality service standards
- Servers: you give strong customer service, work well with people and in a team, share menu information with confidence, have a professional and welcoming manner, manage your time well and keep service quality up when it is busy
- Cellar Door Assistants: you have at least 1 year of relevant hospitality, wine or customer service experience, strong communication and guest engagement skills and a professional customer service approach
- Cellar Door Assistants: you can learn and explain product information, run tastings and talk with guests confidently, use good sales and product knowledge, handle payments accurately and work towards individual and team targets
