Sous Chef

Ready to move from cooking to leading a kitchen? A premium Japanese restaurant in the Australian Capital Territory (ACT) is hiring a capable, driven Sous Chef as a key member of its culinary team.

This job is more than cooking. You will take more responsibility for how the kitchen performs, how the team is led and the quality of service. The kitchen combines Japanese culinary traditions with modern presentation and high-quality Australian ingredients. Together with the senior culinary team, you will keep standards up, run service, build team skills and make sure each dish meets the required quality and consistency.

Key Responsibilities

  • Take charge of kitchen operations when senior culinary management is away, and help lead the team and daily operations at other times
  • Organise prep and service so the kitchen workflow stays efficient
  • Direct and supervise kitchen staff during service
  • Cook Japanese-inspired dishes to a premium dining standard, keeping quality, consistency, portions and presentation right
  • Plan menus and seasonal specials with the senior chefs, and help develop and test new recipes
  • Train and guide junior kitchen staff in a practical way
  • Watch kitchen productivity and look for ways to work more efficiently
  • Help with ordering, stock control and correct food storage, checking stock rotation and keeping food waste low
  • Support the control of food and labour costs
  • Keep strict standards for food safety, hygiene and workplace safety, and make sure equipment, workstations and prep areas are well maintained
  • Keep the kitchen professional and organised

Requirements & Eligibility

  • You are willing to relocate to the Australian Capital Territory
  • You have proven experience as a Sous Chef, Junior Sous Chef or in a senior chef position, gained in a premium restaurant or high-volume professional kitchen
  • Japanese cuisine experience is strongly preferred
  • You have strong cooking skills and understand professional kitchen procedures
  • You have a passion for quality ingredients and high-standard food presentation
  • You can lead, coordinate and motivate a kitchen team, and have experience supporting junior chefs and building their skills
  • You have strong knowledge of food safety and hygiene practices
  • You have excellent attention to detail and consistency
  • You can manage several kitchen priorities during busy service
  • You have strong communication, interpersonal, organisation and time-management skills
  • You are reliable, flexible and committed, and available for evenings, weekends and public holidays
  • Relevant culinary qualifications are desirable
