Sous chef and Head chef

Do you lead a kitchen with pride? A professional hospitality business in Wollongong is hiring a skilled chef who cares about leadership, consistency and top kitchen standards.

This job is more than cooking. You will grow the team, lift kitchen performance and help the operation run at its best. It suits an established Head Chef, or an experienced Sous Chef who is ready for the next step. You will need strong discipline, initiative and a hands-on way of leading.

Experience with Italian food, pizza and pasta will be highly valued. Visa sponsorship is available for the right candidate. Prepare an English-language CV that shows the teams you have led and the menus you have cooked.

Key Responsibilities

  • Run the kitchen so service flows smoothly, and take charge of service when needed
  • Set the bar for food quality, presentation and consistency, and keep it there
  • Coordinate prep and service across all sections, working hands-on in busy, high-volume services
  • Motivate, guide and grow chefs, cooks and junior staff, and teach them prep methods, recipes and kitchen standards
  • Develop and improve menus, recipes, specials and seasonal dishes
  • Watch portion sizes, food costs, waste and profit
  • Manage buying, stock rotation, inventory and contact with suppliers
  • Help with schedules, rosters and labour planning
  • Keep food safety, hygiene and workplace practices strong
  • Find ways to make the kitchen faster and more efficient, and keep it clean, structured and organised
  • Support management with planning and operating decisions, and work well with front-of-house and the management team
  • Create a team culture that is positive, respectful and focused on results

Requirements & Eligibility

  • Proven work in a Head Chef, Sous Chef or senior culinary position
  • Demonstrated skill in leading and developing a kitchen team, with effective communication
  • Strong commitment to consistent, high-quality food
  • Confident working in a fast-paced professional kitchen
  • Good understanding of food costs, stock control and managing waste
  • Strong knowledge of hygiene and food safety
  • An organised, dependable and professional attitude
  • Flexible to work rotating rosters and weekends
  • Italian cuisine experience strongly regarded; pizza and pasta preparation experience highly regarded
  • Relevant culinary qualifications, or equivalent industry experience, advantageous
  • Candidates who need visa sponsorship may be considered, subject to eligibility; visa sponsorship is available for the right candidate
