Love wine, great food and running a smooth dining room? A premium farm-to-table fine dining restaurant in Victoria needs a Restaurant Manager to lead its front of house.
You will shape how every guest feels from the moment they arrive. You will also grow the service team and keep the venue running to premium standards.
The employer wants a proven leader. You should be able to show real experience in excellent service and in managing strong front-of-house teams, with qualifications and leadership skills that can be checked. Sponsorship is not the main focus here. The goal is to find an established professional who brings trusted know-how, polished service and firm operational discipline.

Key Responsibilities
- Be a visible leader on the restaurant floor during every service, keeping standards consistently high
- Show the team what calm, polished and attentive guest service looks like
- Handle bookings, table plans, guest preferences, VIP arrangements and special requests
- Keep talking with guests throughout their meal so they feel looked after
- Run short team meetings before service to share the priorities for the shift
- Train and coach front-of-house staff, and mentor them to build their skills
- Work side by side with the kitchen so the whole restaurant runs smoothly
- Write weekly rosters that match bookings, events, the season and business needs
- Track labour performance and help plan staffing well
- Manage beverage and front-of-house stock, and organise purchasing
- Watch wastage, breakage and stock use to keep costs responsible
- Keep operational systems in order and help produce accurate daily reports
- Find ways to make service more consistent and efficient and guests happier
- Make sure food safety, hygiene, workplace health and safety and responsible service standards are always met, along with venue procedures, licensing requirements and applicable regulations
Requirements & Eligibility
- Demonstrated experience in a role such as Restaurant Manager, Assistant Restaurant Manager, Maître d' or senior front-of-house leader
- A strong background in fine dining, premium restaurants or other high-standard hospitality venues
- Hospitality experience in other countries is highly desirable
- Proven at leading front-of-house teams and helping them grow
- Good understanding of how restaurants operate, including labour planning, stock control and cost management
- Confident wine knowledge, plus experience presenting or explaining international wines to guests
- Minimum WSET qualification required
- Excellent English communication skills; additional European language skills will be advantageous
- A calm, professional manner with guests and when leading the team, with strong attention to detail and a commitment to premium hospitality standards
- Able to supply evidence of your relevant work history, qualifications and professional experience so they can be verified
- International candidates with suitable experience may be considered for sponsorship, subject to eligibility and applicable Australian visa requirements
