Line Chef

Do you enjoy Italian cooking? In Dunedin, a new premium dining venue with an Italian feel needs a Chef de Partie who has done this work before.
A good kitchen depends on chefs whose skill and standards the team can trust. From the very beginning, you will help shape the standards in this kitchen. Expect seasonal produce, fresh pasta, pizzettas and other dishes with Italian roots. Genuine commercial experience matters, and so does taking ownership of what you cook.
The employer wants proven technique, steady results, tidy organisation and confidence during professional service. Sponsorship may be possible for overseas applicants whose experience and qualifications suit the role. A tip: show the Italian dishes you have cooked on your English-language CV.
Key Responsibilities
- Own the section you are given, through prep and right to the last plate of service
- Get every item of mise en place done, so your section is ready before each shift opens
- Plate food exactly as the recipes and presentation guides say
- Support the making of fresh pasta and traditional doughs
- Hold plating, portion sizes, quality and timing at one level from start to finish
- Assist with inventory, orders, stock and controlling food costs
- Meet the hygiene and food safety rules used in New Zealand, and keep your bench efficient, neat and clean
- Cooperate with the Head Chef, the Sous Chef and other cooks, and back a disciplined, professional brigade
- Play a part in team growth and in setting strong habits as the new kitchen starts
Requirements & Eligibility
- Minimum 3–5 years working professionally as a chef in relevant roles
- Proven commercial kitchen background, with time spent in high-volume or busy services
- Italian cuisine experience is strongly preferred
- Demonstrated skill in running a section independently
- Strong grasp of food safety, hygiene and preparation
- Knows stock control and the systems used in commercial kitchens
- NZ Level 4 cookery qualification (relevant) or equivalent is preferred
- Pays close attention to detail, is well organised and stays consistent when the pressure is on
- Willing to do evening and weekend shifts in a six-day operation
- Applicants must hold legal work rights in New Zealand, or satisfy Accredited Employer Work Visa requirements
- Sponsorship may be open to overseas candidates with suitable qualifications and experience
