Head Chef

Can you run a busy hospitality kitchen? This role suits an established Head Chef or an experienced Sous Chef. You need practical skills, leadership experience and good business sense to take ownership of the kitchen.
Cooking well is only one part of the job. You will also bring together food quality, team leadership, a well-organised kitchen, cost awareness and steady service. You can help with menus and train kitchen staff. You will also keep standards high for restaurant service and for a range of functions and events.
Keep your employment documents ready. If any are in Indonesian, have them translated into English where the visa rules require it.
Key Responsibilities
- Run the kitchen every day and take overall responsibility for it
- Lead and supervise the kitchen team and help each person grow
- Plan menus and cook them to a high standard every time, and help with seasonal menus and food promotions
- Keep food quality, presentation and consistency the same across all services
- Organise the kitchen for breakfast and restaurant services
- Look after catering for weddings, conferences and private functions
- Manage food buying, stock and kitchen inventory, watch food costs and cut waste
- Write staff rosters that fit the needs of the operation
- Keep up food safety, HACCP and workplace health and safety standards
- Work with other hospitality departments so service goes well, and review kitchen processes to make improvements
- Keep the kitchen clean, organised and professional
Requirements & Eligibility
- Proven professional work as a Head Chef or experienced Sous Chef
- Strong experience in commercial kitchens, including relevant work in hotels, resorts, restaurants or similar hospitality places
- Proven ability to lead and manage a kitchen team
- Experience creating menus and putting them in place
- Practical knowledge of kitchen budgets and food costing
- Experience with buying, stock control and managing inventory
- Knowledge of HACCP and Australian food safety practices
- You can handle several services and functions in a busy place, and you have good organisation and time-management skills
- Strong skills in training and developing staff, with strong communication and team leadership
- Proven ability to work on your own and own the kitchen operations
- Professional experience that you can support with appropriate employment documents
- You can satisfy the applicable Australian employment and sponsorship requirements
