Can you run a kitchen and keep the numbers healthy at the same time? An established hospitality venue in Albany, in the Great Southern region of WA, needs a Head Chef with good business sense.
This is a senior job. You will need strong leadership plus solid operational and financial skills. Each day you will check how the kitchen is doing, grow your cooks' skills, keep food quality steady and watch costs. The kitchen must also stay safe and run smoothly.
You will have a say in menu planning, better kitchen systems and the future direction of the venue's food. Tip: an English-language CV that shows your cost and team results will make your application stronger.
Key Responsibilities
- Run the kitchen every day and own its results across every service
- Lead the team and plan who works each day
- Keep food production high in quality and consistent, checking portion sizes and plating
- Create efficient kitchen systems, standard recipes and operating procedures, and put them into practice
- Buy food and build good relationships with suppliers
- Track inventory and stock movement, and oversee stock rotation and ordering
- Keep food costs low and avoid waste
- Manage labour costs and rosters for the kitchen
- Watch the kitchen budget and financial targets
- Write and refresh menus and seasonal dishes, while protecting food quality standards
- Hire new kitchen staff and help them settle in
- Train and mentor your cooks, manage their performance and run development reviews
- Make sure the kitchen meets food safety and HACCP requirements
- Uphold workplace health and safety standards
Requirements & Eligibility
- Proven experience working as a Head Chef or Senior Sous Chef
- Experience running a busy restaurant kitchen
- Strong ability in operational and financial management
- Demonstrated experience controlling both food costs and kitchen labour costs
- Strong skills in leading a team and managing staff
- Experience building kitchen systems and putting them in place
- Able to manage purchasing and suppliers
- Excellent knowledge of HACCP principles and food safety
- Strong understanding of modern Australian cuisine
- Able to create good-quality menus that are commercially viable
- Excellent problem-solving skills, plus strong organisation and communication skills
- Can keep standards high under pressure
