This Cook role is with a hospitality employer in Australia that runs a busy restaurant. The employer wants a chef who is skilled in Indian cuisine and has clearly worked in commercial kitchens before.
Good cooking is only one part. You also need discipline in the kitchen, dependable technique and hands-on experience. Each day you will help organise preparation, protect the quality of the food, and manage stock, spending and wastage so the kitchen runs smoothly.
Selection depends on your relevant background, your practical ability and how well you suit the position. Tip: get an English-language CV ready that names each kitchen you have worked in.
Key Responsibilities
- Make Indian dishes that meet the restaurant's standards for quality and how food looks
- Before service starts each day, plan what needs to be prepared and get it organised
- Stay quick and efficient during busy trading times
- Use the same recipes so every dish has the same taste, look and portion size
- Track ingredient use to help hold down food costs, and use smart preparation and stock practice to reduce waste
- Hold the right amount of stock and support purchasing
- When deliveries arrive, check them, put them away correctly and rotate older supplies first
- Support menu preparation, new recipes and the costing of dishes
- Keep work moving smoothly across the preparation and cooking areas, and coordinate kitchen jobs so service is on time
- Teach junior kitchen staff practical skills, and support the supervision of kitchen employees if needed
- Protect food safety, hygiene and cleanliness
- Cooperate with the kitchen crew and front-of-house staff
Requirements & Eligibility
- Roughly 3–4 years of relevant cooking experience in commercial kitchens
- You have prepared Indian cuisine in a professional kitchen and can prove it
- Deep understanding of Indian spices, ingredients, recipes and cooking techniques
- Background in a busy restaurant or high-volume food service, with the ability to keep quality and output steady when service is busy
- Advantageous: a hospitality qualification or relevant formal training
- You understand food costing, portion control, kitchen cost management, stock control, ordering and waste minimisation
- Well organised and good at managing your time
- You communicate clearly and work well in a team
- Solid knowledge of food hygiene and safe kitchen practices
- Professional, dependable and positive at work, and comfortable in a diverse hospitality team
- Ready to go through relevant employment, experience and eligibility verification
