A well-established hospitality employer in Victoria is now hiring an experienced Indian Chef. Your strengths should include Hyderabadi Dum Biryani, Tandoor cooking and South Indian tiffins. Besides cooking, you will help keep the kitchen efficient and help your team grow.

Key Responsibilities
- Cook Hyderabadi Dum Biryani with authentic methods and the kitchen's set recipes
- Make Tandoor dishes and South Indian tiffins
- Be responsible for how Indian dishes are prepared and for their quality
- Help create the menu and keep each recipe the same every time
- Organise daily food prep and mise en place, check ingredient deliveries and watch food quality
- Care for the kitchen equipment and cook at the right temperatures
- Support food costing, ordering and portion control; store food properly and rotate stock
- Cook meals for customers who have allergies or special dietary needs
- Lead the kitchen crew day to day, and coach and guide junior cooks
- Keep the kitchen clean and well organised
- Follow food safety and hygiene rules every time, and help the kitchen meet food-handling and workplace regulations
Requirements & Eligibility
- A commercial cookery certification or relevant culinary trade qualification
- Minimum 1 year of relevant industry experience
- Has held a Chef, Sous Chef or equivalent position before
- Strong capability in making Hyderabadi Dum Biryani
- Practical Tandoor cooking experience
- Experience cooking South Indian tiffins and other authentic Indian dishes
- Experience controlling food costs and portion sizes, and knowledge of stock management and kitchen ordering
- Can schedule, supervise or train kitchen staff
- Current Food Safety Supervisor certification is highly regarded
- Strong team leadership and communication skills
- Works independently and owns their responsibilities, with a reliable, proactive attitude in the kitchen
- Strong problem-solving and organisational skills
