This is kitchen leadership on a big scale in Sydney. A well-established hospitality group wants a senior chef who has already led large kitchen operations and kept results steady across several venues.

The size is clear from the figures: seven food and beverage outlets, a kitchen team of more than 60, and over 12,000 meals produced every week. Great cooking alone is not enough here. You also need team leadership, commercial decision-making, operational control and reliable delivery.

Be ready to show a real history of senior kitchen responsibility, backed by employment and career documents that can be verified. Documents in Indonesian should be translated into English if the visa rules require it.

Key Responsibilities

  • Run the kitchens of seven food and beverage outlets
  • Lead and grow a kitchen workforce of more than 60, supervising day to day and hiring and developing cooks at every level
  • Keep food quality, presentation and service the same at every venue
  • Steer menu development and roll new menus out across the different operations
  • Manage food costs, labour spending, purchasing and stock, and track budgets to help the business stay profitable
  • Set up kitchen systems, procedures and performance standards that work
  • Watch over food safety, workplace health and safety and regulatory compliance
  • Partner with venue managers and senior leaders to reach operating targets
  • Find practical ways to lift productivity, improve workflow and manage costs
  • Keep standards high in a big, fast-moving hospitality setting and build a positive kitchen culture where people take ownership

Requirements & Eligibility

  • Proven background as a Group Executive Chef, Executive Chef or in an equivalent senior culinary post
  • Demonstrated charge of big kitchen teams and complex operations, including high-volume food production
  • Sound grasp of food costing, budgets, labour control and purchasing, with demonstrated commercial insight into kitchen profitability
  • Menu development experience and a record of keeping food standards consistent
  • Proven at recruiting, training, mentoring and keeping kitchen staff
  • Strong organisation, communication and people-management skills
  • Can think and lead strategically, yet still get hands-on when required
  • Experience across multi-venue hotels or hospitality is highly regarded
  • Knows food safety, workplace health and safety and regulatory requirements
  • Experience with international recruitment or sponsorship is advantageous
  • Can supply verifiable evidence of relevant employment and senior responsibilities
  • Sponsorship on offer for eligible candidates
