Key Responsibilities

  • Cook Japanese food that is authentic, consistent and well presented
  • Make sushi and sashimi with professional knife and preparation skills
  • Prepare seafood and set up the cold-section mise en place
  • Cook Japanese hot dishes on the grill, fryer, pan and yakitori sections
  • Choose, prepare and handle ingredients to professional kitchen standards, with exact portions and consistent presentation
  • Finish all daily prep before service starts
  • Store food correctly, keep it fresh and rotate stock
  • Follow food safety, hygiene and sanitation rules at all times, and keep prep and cooking areas clean, organised and ready
  • Work fast and accurately when service is high-volume, and coordinate with other kitchen staff so service runs smoothly
  • Move to different kitchen sections and meet other operational needs when required, and help the wider team with daily tasks
  • Show discipline, professional standards and attention to detail

Requirements & Eligibility

  • Minimum 3 years of professional experience in Japanese cuisine
  • Proven work history in Japanese restaurants, sushi establishments, izakaya or similar commercial kitchens
  • Practical skills you can demonstrate in sushi, sashimi or Japanese hot food preparation
  • Strong knife skills and experience with seafood
  • You can show genuine hands-on cooking experience relevant to this position, and provide appropriate evidence of your professional experience and culinary skills
  • Experience in a fast-paced professional kitchen, keeping quality and consistency during busy services
  • Good understanding of food safety, hygiene and professional kitchen practices
  • Reliable, punctual and professional
  • Strong communication, and able to work as part of a kitchen team
