Have you moved past day-to-day cooking and into leading a kitchen? A top-end hospitality business in Victoria, Australia, already well established, is recruiting a Senior Chef to sit in its kitchen leadership group. They want proof that you can lead people, hold standards at an exceptional level and shape where a professional kitchen is heading.

You will join skilled culinary colleagues who treat detail, consistency and technical skill as essential. Your work history, qualifications and achievements weigh heavily in selection. Applicants with clear high-end experience get preference, and a background in Michelin-starred kitchens, or similar fine-dining kitchens overseas, is valued highly.

Key Responsibilities

  • Be the leader in the kitchen during prep and service, keeping watch on how dishes are made from the first order to the last
  • Supervise junior and commis chefs, and coach, train and mentor developing cooks on an ongoing, practical basis
  • Hold every plate to exceptional standards for quality, look and consistency
  • Support the Head Chef with the daily running of the kitchen
  • Help plan menus, develop recipes and drive culinary innovation, including bringing new dishes onto the menu
  • Check that all staff apply kitchen procedures the same way every time
  • Manage ingredient ordering, stock rotation and how much stock is held
  • Assist with costing dishes and controlling kitchen resources well
  • Record operational and compliance information accurately
  • Keep the kitchen safe and hygienic, meeting food safety and workplace health standards consistently
  • Coordinate closely with the front-of-house team while service is running
  • Find ways to make the kitchen more efficient and raise culinary standards, leading by example in a disciplined, respectful and professional way

Requirements & Eligibility

  • A minimum 5–7 years' background in professional kitchens
  • Plus a minimum 2–3 years' time as a sous chef, senior chef or supervisor
  • Proven background in high-end culinary environments such as fine dining or Michelin-starred kitchens, or equivalent
  • Your career shows progression and growing professional responsibility
  • Strong technical cooking skills in contemporary methods
  • Proven ability to lead and develop a team, and to train, mentor and motivate kitchen staff
  • Strong understanding of kitchen compliance, hygiene and food safety
  • Excellent communication and organisation
  • Keeps composure and high standards when service is demanding
  • Experience in inventory management, kitchen costing and stock control
  • Understands current food trends and sustainable practices in the kitchen
  • Preferred: a relevant culinary qualification, apprenticeship or equivalent professional training
  • Strongly committed to continuous improvement, consistency and quality
  • Present situation: working in Australia, holding a valid visa
  • Can supply suitable evidence of qualifications and professional experience
