Do you love cooking Asian fusion food? A premium hospitality business in Australia wants a trade-qualified Sous Chef to bring strong kitchen skills and leadership to its team.

You should be an experienced chef who can prove it with your qualifications, your commercial kitchen history and your hands-on skills. You will help lead the kitchen, run service, develop the menu and lift team performance, working with experienced senior chefs.

Here, your experience and skills can be recognised in an Australian kitchen. There is also a path to build your career and take on more responsibility. Sponsorship is available for the successful candidate. Have your trade papers translated into English if they are in Indonesian.

Key Responsibilities

  • Make sure the kitchen runs well during service, and keep procedures accurate and consistent the whole time
  • Lead the kitchen team and keep the work flowing in an organised way
  • Give out kitchen tasks based on daily needs and how busy service is
  • Supervise food prep so every dish meets the quality and presentation standard
  • Use your strong knowledge of Asian flavours, ingredients and cooking methods
  • Keep recipes, portions, flavours and plating consistent
  • Work with senior culinary leaders on the menu and new dish ideas, and share ideas to make the kitchen perform better
  • Coach, train and mentor junior chefs and other kitchen staff who are still learning
  • Work together with front-of-house so service stays efficient
  • Track stock levels, orders and what ingredients are available
  • Help with food costing, portion control and cutting kitchen waste
  • Help with rosters so kitchen staff are used well
  • Make sure food safety, hygiene and workplace health and safety rules are followed, and keep the kitchen clean, safe and well organised
  • Build a positive team culture based on accountability and high standards, and help senior management reach goals for operations, food and guest satisfaction

Requirements & Eligibility

  • Trade-qualified Chef holding relevant recognised qualifications
  • Minimum 2 years' experience working as a Junior Sous Chef or Senior Chef de Partie
  • Strong hands-on experience in a commercial restaurant kitchen
  • Demonstrated experience in, or substantial exposure to, Asian or Asian fusion cuisine, with good knowledge of Asian ingredients, flavours, prep methods and cooking techniques
  • Able to produce high-quality food consistently when service is demanding
  • Previous experience supervising or supporting other kitchen staff
  • A strong understanding of how a kitchen operates and how service is coordinated
  • Knowledge of ordering, stock control, food costing and managing waste, plus an understanding of menu planning and portion control
  • Strong leadership and communication skills
  • A professional attitude to food safety, hygiene and safety at work
  • Able to work rotating shifts, including public holidays and weekends
  • Willing to relocate and settle into work in Australia
  • A reliable, professional attitude that puts the team first
