Key Responsibilities
- Cook quality plates for the à la carte menu and for functions, choosing the technique each dish needs
- Team up with the Head Chef on menus and the day-to-day kitchen plan
- Take part in creating new menus and working out what they cost
- Pick and inspect fresh ingredients so they meet the quality bar, then get them ready; learn about local and regional produce and the best way to look after it
- Look after storage, stock rotation and ingredient handling, and lend a hand with ordering and inventory
- Check prep as it happens so taste, look and quality never slip
- Keep waste low through good prep habits, correct portions and proper storage
- Hold the kitchen to strict hygiene and food safety rules
- Perform well when the restaurant or a function is busy, and help organise the flow of work so everything goes smoothly
- Coach junior cooks when required and hand them prep and kitchen jobs that match their ability
- Suggest ways the kitchen can run better, and work hand in hand with the rest of the hospitality staff so every guest has a great time
Requirements & Eligibility
- You hold Certificate IV in Commercial Cookery or a recognised equivalent
- You have at least 3 years of relevant work in professional kitchens
- A strong background in commercial cooking and food prep, including time in quality dining venues
- Fine dining work in your background is advantageous
- Time spent in regional or rural hospitality is also advantageous
- You know food safety, hygiene and kitchen procedures well
- You enjoy cooking with fresh and seasonal produce and care about how food looks, tastes and stays consistent
- Quick and organised in a fast-paced kitchen, able to multitask and manage your time
- You keep your cool and decide well when things get stressful
- You communicate clearly and are a good team member
- You can help oversee junior staff and pass tasks to them
- Professional in attitude and committed to high hospitality standards, with a genuine wish to grow a long-term culinary career in Australia
- Must satisfy relevant Australian employment and visa requirements
