Is your cooking already at a senior level? A well-established hospitality company on the West Coast of New Zealand wants a Sous Chef or Senior Chef de Partie. You would cook across several of its venues.
Job titles alone will not decide who gets hired. The employer will look at what you really did in past kitchens: your duties, your qualifications and whether you can show the skills you list. Real commercial kitchen experience is the key.
In this role you take charge of quality, prep and service, and help each venue serve good food quickly and consistently. A simple tip: write your English-language CV with real examples, such as the menus you cooked and the staff you trained.
Key Responsibilities
- Own the kitchen tasks and service duties given to you
- Cook and prep meals that meet a steady commercial standard, for breakfast, lunch and dinner
- Organise the mise en place and each day's prep list
- Make sauces, gravies, garnishes and other parts of each dish
- Cook for special diets and other food needs
- Look at ingredients for quality and condition before using them
- Portion, plate and finish dishes to the presentation standard, and keep quality steady even when service is under pressure
- Track stock and help with inventory
- Run and adjust commercial ovens, grills and other cooking gear, and keep equipment and work areas safe and working
- Keep kitchen areas clean, tidy and practical
- Work smoothly with the other chefs and kitchen staff, and guide, train and help junior cooks
- Follow food safety, hygiene and workplace procedures
- Help out with functions, special events and extra service needs
- Suggest practical ideas for seasonal dishes and a better menu
- Adjust to the different ways each venue runs service
- Work rostered shifts, including weekends, early mornings and late evenings
Requirements & Eligibility
- Proven work in a commercial kitchen, with strong practical skills in cooking and food prep
- NZ Register Diploma, or a minimum of 3 years relevant professional experience
- A genuine work history that shows the level of kitchen experience you claim, and the ability to give supporting evidence for your qualifications and past jobs
- Experience handling busy services, and confident working breakfast, lunch and dinner
- Good understanding of food quality, presentation and portion control
- Able to work fast while keeping professional standards
- Strong teamwork and communication skills
- Able to take responsibility and show leadership in service, with experience training or supporting other kitchen staff
- Knowledge of food safety, hygiene and commercial kitchen practice
- Flexible to work rostered shifts, weekends, evenings and early mornings
- Experience in desserts or baking is an advantage
