Sous Chef level role in Eden, on the NSW South Coast. A professional hospitality operation wants an experienced Sous Chef or senior culinary professional. Your qualifications, experience and practical skills should be clear and able to be verified.

Good technique is only one part of the job. The kitchen also needs someone steady, organised and ready to lead, who keeps calm and takes responsibility under pressure. You will push daily kitchen performance, back up the senior chefs and lead the team to serve high-quality food and service, every day.

Tip: keep your certificates and work references ready in English. Translate any Indonesian documents if the visa rules ask for it.

Key Responsibilities

  • Lead and organise the kitchen through each day's service, and take charge of kitchen operations when required in the absence of senior chefs
  • Help senior chefs with menu planning and kitchen prep, and help create and launch new and seasonal menu items
  • Cook dishes to set quality and presentation standards, and check quality, consistency and presentation before service
  • Run the pass so plated dishes go out on time
  • Supervise and guide the kitchen team when service is busy, and train them in kitchen procedures, food prep and safe work practices
  • Keep strict food safety, hygiene and HACCP standards, with work areas clean, organised and in line with health standards
  • Watch stock levels and plan food prep around operational needs
  • Help with inventory, food costing and reducing waste
  • Help care for kitchen equipment and report anything that needs maintenance
  • Talk with front-of-house staff so service runs efficiently
  • Look for ways to improve kitchen efficiency and food quality

Requirements & Eligibility

  • At least 2 years' experience as a Sous Chef, Senior Chef or equivalent
  • Proven experience leading or supervising kitchen personnel
  • Demonstrated professional culinary experience that suits independent verification
  • A relevant culinary qualification, an apprenticeship, or as a minimum Certificate III in Commercial Cookery or equivalent
  • Strong practical knowledge of commercial cooking and food preparation techniques
  • Knows food safety, hygiene and HACCP requirements
  • Valid NSW Food Safety Certificate, plus current food handling certification
  • Keeps food quality consistent even under high pressure
  • Strong at planning, organising and managing time
  • Experience with stock control, food costs and cutting kitchen wastage
  • Strong communication and teamwork
  • A professional attitude and real commitment to culinary standards
  • Able to work full-time in New South Wales
  • Sponsorship on offer for the successful applicant
