Have you spent years cooking in busy commercial kitchens? This Chef role in Arrowtown, Otago is for people who want more than just another cooking job.

The employer is looking for experienced cooks with a real, provable history in professional kitchens. You will take more ownership of the food, the team and the daily running of the kitchen in New Zealand.

You can show the skills you already have and also build new ones, such as kitchen leadership, menu development, stock management, working with suppliers and running a restaurant.

Key Responsibilities

  • Guide and back up a brigade of up to 12 people on each shift, sharing the lead role
  • Keep prep and service moving smoothly by organising who does what
  • Own the taste and look of every plate, cooking and finishing food to the house recipes and what service demands
  • Pick produce on its freshness, quality and suitability
  • Look after prep jobs like cleaning, chopping, blending, seasoning, heating and cooling
  • Keep a close eye on each dish so cooking times and temperatures stay correct
  • Prepare food the right way for guests with dietary or special needs
  • Step into any section of the kitchen with confidence when the shift calls for it
  • Inspect deliveries, raise any stock that falls short and put every ingredient away correctly
  • Monitor food stocks, inventory and what equipment the kitchen will need
  • Support ordering and working with suppliers
  • Suggest fresh recipes and menu ideas, and make existing dishes better
  • Run steady, accurate kitchen routines and record them in the digital tools used for accountability and reporting
  • Track food use to help control costs
  • Assist in checking labour and efficiency in the kitchen, and pass performance issues on to management
  • Create a friendly, professional mood in the team
  • Hold the same high standard on quiet days and rush days, noticing problems early and dealing with them
  • Maintain hygiene, cleanliness and equipment, sticking to workplace procedures and food safety rules
  • Play a part in making kitchen systems and service better

Requirements & Eligibility

  • Minimum 3 years' professional kitchen experience
  • Work history in commercial kitchens, hospitality venues or well-established restaurants, with proven time in a senior or responsible role in the kitchen
  • Real, checkable employment relevant to this job, backed by paperwork for your qualifications and professional experience
  • Can demonstrate hands-on cooking and food prep in practice
  • Knows professional kitchen procedures well
  • Comfortable moving between multiple kitchen sections
  • A track record of organising and helping fellow kitchen staff
  • Having supervised or led a kitchen team before is highly desirable
  • Solid grasp of plating and food quality standards
  • Understands dietary needs and how to prepare food safely
  • Has handled stock control, inventory and kitchen supplies
  • Knowing about food costs and operational efficiency is advantageous; having helped with menu development or recipe creation is also advantageous
  • Stays calm and works efficiently when service gets busy
  • A good team player and communicator who gets on well with suppliers and management
  • Takes a professional approach and is happy to take responsibility
  • Open to learning the digital tools the restaurant uses for accountability and reporting
  • Fluent English when you speak, read and write
  • Must meet applicable New Zealand employment and visa requirements; sponsorship available for eligible candidates
