Chef and Cook

Do you cook Indian food at a professional level? A Queensland hospitality business that is busy and well established wants to fill several permanent positions. It is looking for Indian Curry Chefs/Cooks, Tandoori Chefs/Cooks and Indian Cuisine Sous Chefs.

The kitchen moves quickly. Your dishes must be truly authentic, and the quality, the look of the food and the running of the kitchen must stay at a high level. Overseas applicants who are suitably qualified and meet Australian visa requirements can be sponsored.

Overseas applicants need an English test result (IELTS or PTE), so book your test early if you apply from Indonesia.

Key Responsibilities

  • Make real Indian food from the full menu: curries, tandoori items, sauces, breads, rice, entrees and desserts
  • Run the traditional tandoor ovens and look after them, where the kitchen uses them
  • Plate every dish using the agreed recipes, portions and presentation, and keep an eye on prep so quality does not change
  • Give input on menus, thinking about what food and staff cost
  • Work out each day's and each week's kitchen production with the managers
  • Look at every ingredient to be sure it is fresh and good before cooking
  • Hold the right amount of stock, cut waste and keep food in temperature-controlled storage so it stays safe
  • Keep the kitchen, its equipment and all work areas clean, hygienic and safe
  • Lead, teach and support junior cooks where required
  • Handle complaints about food and other customer feedback calmly and professionally
  • Be well organised, use your time well and keep up the pace in a busy commercial kitchen

Requirements & Eligibility

  • Minimum three years cooking authentic Indian cuisine
  • Work history as an Indian Curry Chef, Tandoori Chef, Indian Cook or Sous Chef
  • A Commercial Cookery or Hospitality qualification relevant to the job you apply for
  • Deep knowledge of authentic recipes and traditional Indian cooking methods
  • Able to keep up and stay efficient in a fast-paced, high-volume kitchen, and excellent at organising and communicating
  • Committed to workplace health and safety, food safety and hygiene standards
  • Able to train and supervise junior kitchen staff where required
  • For overseas candidates, a positive skills assessment is required
  • For overseas candidates, an IELTS score of 5.5 or 6.0 in each module, or an equivalent PTE score, is required
