Key Responsibilities

  • Take apart carcasses from a range of meat types
  • Portion, trim, grind and cut meat with accuracy
  • Produce sausages plus other processed meat lines
  • Get meat ready to the presentation standard of a gourmet retail shop, seasoning, smoking or marinating it as required
  • Operate slicers, grinders and similar meat-processing machinery
  • Label, price, package and weigh items without errors
  • Build eye-catching retail displays and keep them in good order
  • Inspect meat and finished goods to make sure quality and consistency are right
  • Prepare customer orders correctly and efficiently
  • Keep track of stock, support inventory management and update production, stock and inventory records
  • Keep knives, tools, machines and prep areas clean and well maintained
  • Work to food safety, hygiene and workplace safety procedures in a tidy, organised and compliant workspace

Requirements & Eligibility

  • Minimum 3 years of professional experience that is relevant
  • Certificate III in Meat Processing, or another relevant qualification
  • Demonstrated experience with carcass breakdown
  • Strong knife skills and meat-cutting skills at a commercial level
  • Has produced sausages and other meat products
  • Confident and competent on slicers and meat-processing equipment
  • Sound understanding of hygiene and food safety practices, and knows workplace health and safety requirements
  • Has handled stock and inventory management
  • Works to the order requirements and specifications of customers
  • Strong attention to presentation, accuracy and quality
  • Able to show industry experience that is genuine, relevant and verifiable
